Full of yummy veggies!

Note to self:
One day, when I'm rich, get a camera that focuses!


Made a simple penne with veggie sauce tonight with a side of broiled garlic asparagus and brussel sprouts.



Easy recipe:


Ingredients:
7 or 8 oz of penne pasta
zucchini
summer squash
small head of garlic
1/2 medium onion
about 10 leafs of fresh basil
spices (Italian seasoning, garlic salt, oregano, etc...)
small head of broccoli (only flowers)
nutri yeast
Olive oil
Tomato sauce

For the sauce:
Put a few spoonfuls of olive oil in large sauce pan on medium. Add cut broccoli, squash, and zucchini. Let simmer for a few minutes (until slightly cooked.) Add dried spices, garlic, and onion. Let simmer. Add tomato sauce and basil and some nutri yeast if desired.

For a side I broiled cut brussel sprouts and asparagus sprinkled with a little olive oil, pressed garlic and diced onion for 7 minutes, stirring in between.

Easy, simple, and good!
