Full of yummy veggies!

Note to self:
One day, when I'm rich, get a camera that focuses!

Made a simple penne with veggie sauce tonight with a side of broiled garlic asparagus and brussel sprouts.

Easy recipe:

Ingredients:
7 or 8 oz of penne pasta
zucchini
summer squash
small head of garlic
1/2 medium onion
about 10 leafs of fresh basil
spices (Italian seasoning, garlic salt, oregano, etc...)
small head of broccoli (only flowers)
nutri yeast
Olive oil
Tomato sauce

For the sauce:
Put a few spoonfuls of olive oil in large sauce pan on medium. Add cut broccoli, squash, and zucchini. Let simmer for a few minutes (until slightly cooked.) Add dried spices, garlic, and onion. Let simmer. Add tomato sauce and basil and some nutri yeast if desired.

For a side I broiled cut brussel sprouts and asparagus sprinkled with a little olive oil, pressed garlic and diced onion for 7 minutes, stirring in between.

Easy, simple, and good!

I found a wonderful vegan recipe for candy corn:

http://theurbanhousewife.blogspot.com/2007/09/homemade-vegan-candy-corn-happy.html

I made a few alterations. ..

Candy Corn
Ingredients:
1 cup sugar

2/3 cup corn syrup
5 tablespoons Earth Balance

1 teaspoon vanilla extract
2 1/2 cups powdered sugar
1/3 cup of soy milk
a pinch of sea salt
Red and Yellow food coloring

Instructions:
Mix powdered sugar, and salt in a large bowl. In a large saucepan, bring the sugar, corn syrup, Earth Balance, and soy milk to a boil over high heat. Reduce to medium/ low and boil for 5 minutes or about 200-225ْ. (Be sure not to boil for too long! if so it will make "hard candy corn crumble.") Remove from heat and add powdered sugar mixture. Stir to combine. Let mixture stand about 15 minutes. Add several drops of yellow food coloring to one piece of dough & knead food coloring into the dough until smooth and color is even. Repeat using red & yellow food coloring (for orange) with the second piece & leave the last piece white, but knead it until smooth. Shape the candy corn as desired, (I didn't shape much!)

Yields about 120 candy corns. They are larger and sweeter than the ones bought in the store.
